I think there should be some sort of qualification, similar to a barista when it comes to the use of a deep fryer. You wouldn’t think it, but given the same source materials – oil, frozen chips, battered chicken, so on – you can get wildly different results. For some places, being able to deliver a crispy chip seems like too much to ask. Not at Chicken Coop though! I can’t yet vouch for their other foods, but their chips and Korean fried chicken are f#€
