Beef noodle here is not bad but…. …it’s not like any pho I’ve ever had before. They did a few things which I normally hate. Top of the list is pre-putting bean sprouts, basil and chili in. Bean sprouts should be optional as it normally waters down the broth. Then there was the noodle itself. Whoever had prepared it had over soaked it, resulting in very short, broken strands. There’s also no lemon. The broth itself is tangy, but since when is this an characteristic of pho?! We must remind ourselves; we’re sitting in Bank Street, with the interior-design-right-now trifecta of exposed concrete, tiling and vintage light bulbs. Never mind said globes use more energy, you offset this by having your pho in an environmentally friendly disposable paper cup. Revolutionary! You are not eating here because you want an ‘authentic’ Viet dining experience. You are here because you’re a dirty beard toting hipster – and you know what? There’s nothing wrong with that.
